Promote and protect, in Italy and in the world, the true Neapolitan pizza, produced and processed according to the ancient Neapolitan traditions and customs. This is the mission of the Associazione Verace Pizza Napoletana (AVPN), which for over thirty years has been at the forefront in the defense of pizzerias, pizza makers and products in the supply chain linked to this great excellence of the gastronomic Made in Italy, realized in accordance with the characteristics described in the International Regulations to obtain the collective trademark "Vera Pizza Napoletana", in force since 1984 and drawn up and registered by the AVPN.

Founded in June 1984 in Naples (where it has its legal and operational headquarters), the Association now has more than 950 affiliated pizzerias in 56 countries, from Australia to Japan, from Russia to Macedonia, from South America to Europe, passing naturally for Italy. Furthermore, we count more than 691 national and foreign pizza makers registered in the AVPN register, that was born with the aim of defending the artisan craft of the pizza maker and professionalizing those who commit to produce the true Neapolitan pizza, guaranteeing the quality of the production process and of the raw material used. A commitment carried out with passion to preserve and enhance a work, indeed an art, that of the 'Neapolitan pizza maker', universally recognized, so much so that it has entered the UNESCO Olympus as an intangible heritage of humanity.

The non-profit association AVPN is currently chaired by Antonio Pace, with the vice president Massimo Di Porzio and the councilor Paolo Surace. The general manager is Stefano Auricchio.

Neapolitan pizza maker for one day

As part of its activities, in order to spread the true Neapolitan Pizza around the world, the AVPN organizes "Neapolitan Pizza Maker for one day".

“Neapolitan Pizza-Maker for one day” is an educational workshop created by “Associazione Verace Pizza Napoletana” to let tourists of all ages know and live the art of Neapolitan Pizzaiuolo, recognized by UNESCO as intagible heritage of humanity. An exciting journey into the history and culture of True Neapolitan Pizza which aims to let the participants live the experience of being a “pizza-maker for one day”

    The day is structured in:
  • Welcome with a cup of nrapolitan coffee and History of the True Neapolitan Pizza
  • Preparation of the dough of True Neapolitan Pizza
  • Stretching, cooking and tasting of neapolitan pizza into the wood- fired oven

The workshop will be held by an instructor of Associazione every day from 10:00 to 14:00 and from 16:00 to 20:00 (Upon reservation on website The class will be held into the school of Associazione Verace Pizza Napoletana, in Napoli, via Capodimonte 19/a. During this experience we will talk about the “right” raw material, you will prepare the dough with hands into the flour, shape the disc of dough on the pizza-maker’s counter and, after covering the disc with tomato, buffalo Mozzarella of Campania, basil and olive oil, the participants will be ready to put the pizza into a wood-fired oven, as tradition wants. Every participant will eat the result of his own work, a pizza folded as a booklet. ( folded in 4). Everyone will have a costumized apron and the card of Friends of Vera Pizza Napoletana.…and not just this! Neapolitan Pizza-maker for one day is also a journey into the Neapolitan tradition. The tourist could also decide to be accompained by a guide into our exclusive “Tour of Vera Pizza”, a path into the streets of Naples to discover the historic pizzerias and the amazing cultural heritage that surround them.
